Jane and Kevin Gaerke and their team of helpers were busy putting the finishing touches to The Beef Shop in Fountain City on May 19. The couple hope to open soon and they definitely look close.
“The demand for locally raised beef and the availability in the stores,” responded Kevin Gaerke, when he was asked why they wanted to open their own retail shop. “It is all grain and grass fed, hormone free Angus beef. There are no dyes in the meat; you can see the color and the marbling.”
The Gaerkes live on the acreage where the cattle is raised here in East Tennessee. They both grew up on farms and have sold (and plan to continue selling) half and whole cows.
The Beef Shop will be different, with all of the cuts and hard work done for home cooks, BBQ bosses and pit masters.
“We are competitive, but what we are selling is a prime product,” said Kevin Gaerke.
“We make all the cuts, and it is all frozen, so it will store for as long as you keep it at frozen temperature,” said Jane Gaerke. “We will have some thawed and refrigerated as well.”
Brats will come in up to 10 flavors: chorizo, Philly, cheddar, Buffalo blue, mild, hot, zesty, Blue Ribbon, jalapeno/cheddar and feta & spinach.
“People that know how to smoke meat will come in for the brisket and the ribs,” Kevin Gaerke said. “We have packs of patties in slider and patty form for easy grilling. The steaks are great on the grill.”
The Beef Shop will retail everything from ground beef to fajita meat to kabobs and about six cuts for roasting to slow cooking. There are also English-style and Korean short ribs as well as soup and stock bones. There is everything from budget cuts of stew or cube steak to t-bones to filet mignon.
For something a little different, The Beef Shop sells oxtail and tongue, which Kevin Gaerke says are popular. “The liver has always been good for people that are low in iron,” he said.
Within days of Archer’s BBQ moving out, the Gaerkes were hard at work changing the entire look of the retail space at 4885 N. Broadway.
“We had been looking for a shop for some time. It isn’t easy to come by,” said Jane Gaerke. “I wanted it to be clean. I know I don’t like to shop somewhere that isn’t clean.”
“This also represents how we raise our cows, too,” added Kevin Gaerke.
The Beef Shop has easy to access refrigerators lining each wall, with the beef cuts clearly labeled.
Small grocery carts are available for customer use, and the counter to pay for purchases has been relocated to the rear of the store to keep things spacious.
“I was thinking of myself when I decided to add the cooler bags and offer the ice packs,” admitted Jane Gaerke. “If I’m out and want to pick up some beef, but I live far away from the store, that’s what I need.”
Fountain City’s The Beef Shop is in the same shopping center as Inskip Grill and Panera and will be open 10 am-6 pm Monday-Friday and 10 am-4 pm Saturday. Closed Sundays.
Soon, customers will be able to pre-order their favorite cuts of meat online at The Beef Shop’s website.
